Hi, Malty friends! It's just about time for (drum roll, please)... Valentine's Day! 💕
Now, we know this holiday typically brings to mind roses, chocolates, and romance between two people, but we like to think of it as a chance to celebrate all types of love. On Valentine's Day, you get an entire day dedicated to celebrating love for your family, love for your friends, and love for the beautiful things that makes us all so wonderfully diverse and one-of-a-kind!
To celebrate this happy holiday, we created a little recipe you can make in minutes (plus freezing time). It's a fun way to fit beets—which are filled with vitamins, plus healthy plant-based compounds that help improve circulation—into dessert! Your little one will be wowed by the pretty pink hues of the bite-sized hearts, and it makes for the perfect snack for when you're reading Malty the Blue Tiger together.
Just be sure to eat them right away, because these little hearts will melt!

Step 1
In a food processor, blend 12 oz (about 1 1/4 cup) light cream cheese, 1 Tbsp sugar (or another sweetener like maple syrup!), 2 to 3 cooked and peeled baby beets, finely diced, and 3 Tbsp pomegranate juice until smooth.

Step 2
Scoop mixture into a resealable plastic bag and seal to close. Snip the corner of the bag and squeeze out mixture to create hearts on pan covered with parchment or wax paper. Freeze for 4 hours.
