Malty's Favorite Berry Blue Yogurt Bark

Packed with fruit • No added sugar • Delightfully colorful!

Malty is naturally drawn to adventure, and we can't help but feel a little more explorative after reading about her journey in Malty the Blue Tiger! But there's one terrain that is sometimes difficult to navigate: easy, healthy recipes for kids that they'll enjoy just as much as candy or ice cream. It's no easy task! This delicious frozen yogurt bark recipe, however, cracks the code. It is packed with antioxidant-rich fruits and no added sugar.

 

Natural sugar occurs in small amounts in foods such as fruit, vegetables, or milk. That kind is A-OK. However, added sugar such as honey, maple syrup, or high fructose corn syrup is added during the processing or preparation of food and can have negative health consequences (think major sugar spikes and crashes! 🙈).

 

This dessert relies on the natural deliciousness of berries, toasted coconut flakes, and pomegranate and apple juice to fuel growing kids. Yum!!

Step 1

Mix 1/4 cup apple juice with 2 cups Greek yogurt.

Step 2

Add 1/4 cup pomegranate juice (or any other juice you have on hand!) with 1 tsp vanilla extract. 

Step 3

Spread mixture on a plate lined with parchment paper. Sprinkle with 1/2 cup berries and 1/4 cup toasted coconut flakes.

(If you only have normal coconut flakes, simply toast them in a dry skillet over medium heat for 1 minute—but be careful, they burn quickly! Toasting coconut flakes brings out their natural sweetness.)

Step 4

Freeze for 4 hours. Once frozen, chip into pieces and devour with your little ones (serves 4)! 😊
